Oatmeal tarte with Rafaello Cream and rhubarb mousse

There's no better combination of fruit than rhubarb and strawberries that is saying summer more.

Ingredients:

Bottom:

2 cups of oatmeal

2 tablespoon of potato starch

1,5 banana

2 tablespoons of agave nectar / honey

2 table spoons of coconut oil

Rafaello filling

Rubarb mousse:

-5 stalks of rhubarb

-3 handfuls of dates

-0,5 teaspoon of agar

Making:

Preheat the oven to 180 degrees

Put rhubatb in it for 10min.

Soak dates in warm water.

Sieve aot flower or grind oat flakes. Add potato starch and mix.

Add banana, agave nectar and oil and mix well. If the dough is too sticky add some flower.

Put some oil on a baking tray and lay it with dough quit evenly.

Bake for 15-20 min.

Disolve agar in a tablespoon of water. Add it to rhubarb and dates (without the water they were soaking in). Blend it together. Don't worry if it's not sweet enogh cause it's going to be on top of super sweet Rafaello cream.

When the bottom is ready set it aside to cool down. When it's cold add Rafaello filling and on top rhubarb mousse. Decorate it with some seasonal fruit.
