Sugar free apple-date Christmas pie
Ingredients:
Crust:
Oat flakes 1,5 cups
Walnuts 1 cup
Dates 1cup
Filling:
2 small apples
100g of dates
2 table spoons of lemon juice
handful of fresh mint leaves
Making:
Soak dates beforehand. Either in cold water for 2-3 hours or in hot water for about 15 minutes.
Blend together oats and walnuts into powder.
Blend cupr of dates until smooth.
Mix together both and form a crust from it with your hands.
Put in the fridge.
Filling:
In a small pan saute apples cut into small pieces. When they'll start getting soft add dates, mint and lemon jouice. Blend together into smooth. Keep stiring until apples become more thick than watery.
Pour it onto the crust and keep in the fridge for at least an hour.
On top put some roastes walnuts or any other topping you want.
