Oat milk curry

Oat milk curry

Ingredients for 1 portion:

- Long red pepper

- Rice noodles 50g

- 0,5 can of diced tomatoes

- 0,5 cup of unsweetened oat milk

- 90 g of tofu

- tumeric

- chilli powder

- half a lime

Set a pot of water to boil.

Cut red pepper into slices and fry on a non-stick pan. When it starts to get softer add tomatoes and spices.

When water starts to boil put noodles into it for 5-6 min, depending on a package.

When tomatoes get mushy add tofu and oat milk into them and simmer on a low heat until noodles are ready.

Serve with noodels and juice from lime.
